The aim of the course is to develop the necessary skills to assess and report on the conformance and implementation of processes based on ISO 22000:2018 / FSSC 22000 V5.1 / FSMS. You will learn how to initiate an audit, prepare, and conduct audit activities, compile and distribute audit reports, and complete follow-up activities. We will also explain the purpose of a Food Defence Management system and the business and benefits of improving performance to explain the role of an auditor to plan, conduct, report and follow up a Food management system audit to establish conformity (or otherwise) with ISO 22000:2018 / FSSC 22000 V5.1 / FSMS and in accordance with ISO 19011 (and ISO/IEC 17021 where appropriate).

Summative assessment
An examination will be completed at the end of the course.
Course outline
Learners who complete this course will be able to explain
- The fundamentals of auditing principles;
- The role and responsibilities of an auditor to plan, conduct, report and follow up on an internal FSMS / ISO 22000:2018 / FSSC V5.1 audit in accordance with ISO 19011;
- The Plan-Do-Check-Act cycle, the process based FSMS model for ISO 22000: 2018 and the role of an internal audit in the maintenance and improvement of food safety standards;
- The PRPs and additional requirements of ISO 22000:2018 / FSSC 22000 V5.1 /FSMS.
